Pumpkin Cinnamon Donuts

Are you rubbing your eyes, unsure if you read the title right? I understand, really. The mind boggles at the thought of Pumpkin Cinnamon Donuts. At least mine does.

This post is completely the fault of Andie Mitchell at Can You Stay For Dinner? I saw her pictures and knew I had to make these. In fact, I went right out and bought a donut baking pan – who even knew such a thing existed? – then I came home and made a batch.

 

I guess I have a weakness in this area. In my defense, I was going to Bed, Bath, and Beyond already – our shower head broke and a new one was needed so I could take a shower.

Because these donuts are baked, there is no oil or fat in them. Applesauce and pumpkin puree work just fine to make the donuts moist and crumb-like.

Aren’t they beautiful? We had one for dessert last night, but I plan on using them for breakfast, with my homemade yogurt and applesauce.

I bet you’re jealous.
